The Payés salami has been produced according to a traditional recipe by the family business Casa Riera Ordeix in Vic in Cataluña north-east Spain since 1852. This air-dried country sausage is made only from carefully selected natural products, from the best meat from happy pigs and without added coloring. After 2 to 3 months of ripening, the salchichón has a firm consistency and is named after its rustic payés appearance.nnt.
