This is the most common olive variety. This olive of Andalusian origin adapts perfectly to the demanding weather conditions of the "Castilla-La Mancha" region.

Tasting note: When you open the bottle you discover an oil with complex aromas, robust, intense and lasting in taste. It has nuances of green leaf, banana, and even mint.
Food Pairing: Stews with veal and lamb, oven-cooked fish such as char, turbot, plaice or sea bream, tapas with chorizo, Spanish paprika sausage, drizzled over Jamon Ibérico (Ibérico ham) and Manchego cheese. Also tastes delicious in tomato salads with fresh onion!
